SOUTHLAND KITCHEN

NATURAL TO REGIONAL CUISINE

"TASTE NATURE!" For Jean Paul Petit from France and Christopher Tworeck from Freiburg, this means: "First and foremost, we process food to the rhythm of the farmers' harvests in our region." They know most of the farmers personally. "This has developed over the years. Today, we don't follow any regional trends; our cuisine has naturally evolved into today's regional cuisine."

If you listen to the two of them, you quickly realize that they are in agreement. "We are united by the search for the original taste of food," is how they describe their cuisine. Jean Paul Petit comes from a farm near Metz. "We made everything ourselves at home. We slaughtered chickens and pigs, grew vegetables and preserved them for the winter." His eyes light up when he talks about the culinary delights of his childhood. Christopher Tworek's mother is also a passionate cook. They both grew up with good food. This love of fresh food unites them: "We are in complete agreement. Our aspiration to cook fresh regional food without using any ready-made products may make more work for us, but it's the only way to cook tasty food." Fortunately, the patron of the house, Holger J. Weber, gives them a free hand. "Our cuisine has to attract guests, otherwise why would gourmets find their way to the remote valley from Sulzburg to Bad Sulzburg?" Holger J. Weber reopened the historic Waldhotel in 2000. Back then, Jean Paul Petit started cooking in the kitchen based on the principles of haute cuisine. The Frenchman had previously worked in renowned restaurants. Christopher Tworeck joined the team ten years ago. Anyone who asks about the head chef is met with an uncomprehending shrug of the shoulders. "We motivate each other, we have the same goal in mind and share the same philosophy."

Chistopher originally studied hydrology and worked in a kitchen during his studies. Today he is a chef, as is his colleague Jean Paul, who never wanted another job. They put a new forest menu on the menu every day. "Anyone who cooks regionally has to be flexible," they say, and are delighted with their suppliers, who are sometimes in the kitchen with their fresh harvest. A pensioner from Sulzburg has just brought a basket of mushrooms and a mushroom sauce with fresh chanterelles is served with the venison fillet tips. Chamois or wild boar are also on the menu, of course the game comes from the forests around the Waldhotel. "Just like every piece of meat we serve," they guarantee. Lamb, heifer, veal - the local butchers buy from the region. An extra page on the Waldhotel menu lists their suppliers.
It's not just the eggs that come from free-range chickens in Eschbach. The Waldhotel kitchen also sources pasta from this small farm. "Fresh!", emphasize the two chefs, "produced especially for us and not dried." They also come from the Markgräflerland region: Potatoes, vegetables and, above all, cheese from the Glocknerhof farm in Münstertal and the legendary ice cream from the Eckhof farm in Horben. The honey is collected by busy bees directly in the forest around the Waldhotel. Christopher Tworeck is a passionate runner. He is slim and lean. His favorite dish is a delicious potato salad. "That's where the art of cooking begins!" he says seriously and talks about his ingredients, such as wild garlic and other fresh herbs. His classic braised dishes such as veal cheeks in Pinot Noir sauce or Black Forest knuckle of venison go well with this. Jean Paul, on the other hand, is primarily concerned with fresh goose liver pâté and the fine bouillabaisse with rouille sauce and garlic croutons - one of the house classics:
Otherwise, the Waldhotel offers new, freshly cooked menus every day. Insider tip: Here you will find one of the best Black Forest gateaux. The wellness and beauty resort is idyllically located in the middle of the countryside, the restaurant is cozy with lots of wood and a tiled stove. The conservatory is bright and flooded with light, and the terrace is a paradise away from the ringing of cell phones, car noise and through traffic.

OASIS OF WELL-BEING

The Waldhotel Bad Sulzburg is an oasis of peace and well-being. Nestled between the green of the fir and spruce trees, the Sulzbach valley exudes peace and harmony. An atmosphere that has inspired the tenant couple Holger J. and Yara Weber, who have created a corresponding concept for the idyllically situated hotel. Now that all the renovation and modernization work has been completed, the Waldhotel presents itself as a successful "island" for wellness and beauty, as well as an excellent restaurant.

The hotel's 39 rooms and suites are modern without being obtrusive. Warm, light colors, light fabrics, timeless design signal the corresponding claim: Here the guest should feel comfortable without having to do without anything. Holger Weber does not rely on pomp, but above all on quality without "unnecessary frills" according to the motto: the guest is the focus. To ensure that the ambience at the Waldhotel Bad Sulzburg is just right, the owners have paid particular attention to small details. For example, the historic parlour, the actual restaurant in the hotel's listed main building, has been modernized in such a way that the original character has been retained. Old wood paintings were reintegrated, an old tiled stove was uncovered and put into operation, the new furniture and the new parquet flooring were unobtrusively integrated into the country house style. A successful synthesis of "new and old" now ensures a pleasant atmosphere for unforgettable hours with an excellent glass of wine and fine food.

A bar has been integrated into the hotel foyer, which is seamlessly connected to a cozy lounge. There is also a cozy place by the open fireplace where you can relax and unwind. The rooms and suites were also designed in different styles to cater to the different tastes of the guests. Here too, the aim was to create airiness and give hotel guests freedom without restricting them with unnecessary accessories.
Fitness and wellness are also part of comprehensive relaxation. The Waldhotel has a lot to offer in this area - with interesting package deals, by the way. As a trained masseuse, medical bath attendant, lymph and aroma therapist and Thalgo beautician, Yara Weber looks after the "medical and cosmetic corner" of the hotel. The therapeutic options are complemented by a well-equipped fitness room, sauna, steam bath and an indoor pool, which is probably one of the most beautiful in the region.

The Waldhotel is no longer an insider tip for conferences. 5 conference rooms, tailored for 2 to 60 people, ensure undisturbed work in the seclusion of the Sulzbach valley. The conference rooms are also equipped for modern means of communication. In the warmer months, all rooms can be opened up to the natural outdoor area and used accordingly. Here too, the Waldhotel, which was renovated by the owner, the Iduna Signal Insurance Group, at enormous financial expense over the course of two years, offers interesting package deals.
Larger groups will find plenty of space in the large banquet hall.
Sports enthusiasts can hire mountain bikes for a fast-paced tour through the countryside. Numerous hiking trails invite you to explore nature. Hiking tips and a hiking map are available at reception.

PRIZE for sulzburg restaurateurs

The Waldhotel Bad Sulzburg is an oasis of peace and well-being. Nestled between the green of the fir and spruce trees, the Sulzbach valley exudes peace and harmony. An atmosphere that has inspired the tenant couple Holger J. and Yara Weber, who have created a corresponding concept for the idyllically situated hotel. In addition to the awards for special examination achievements, the IHK Foundation's sponsorship prizes were presented at the Freiburg graduation ceremony. Among the winners were two graduates from the Markgräflerland region. Stefanie Menzel from Neuenburg and Sebastian Bertram from Sulzburg received sponsorship awards in the hotel and catering industry. Stefanie Menzel trained as a hotel specialist at the Waldhotel Bad Sulzburg.
Due to her outstanding achievements, she received the Colombi Hotel Roland Burtsche GmbH sponsorship award together with Freiburg hotel specialist Christian Peter Radermacher. The award winners share the prize money of 5,000 euros, which Roland Burtsche personally presented to the graduates. The second prize in the hotel and catering industry, the Franz Keller sponsorship prize, which is awarded to the best apprentice chefs, is shared by Sebastian Bertram from Sulzburg and Mira Maurer from Gottenheim.
Sebastian Bertram completed his training as a chef at the Douce Tatjana Steiner Hotel/Restaurant Hirschen in Sulzburg. Fritz Keller awarded the graduates with the prize named after his late father with a total sponsorship amount of 5,000 euros. A total of eleven sponsorship prizes were awarded to 14 winners. This year's sponsorship prizes have a total value of 46,550 euros, which the young prize winners can use for their professional development. IHK President Dr. Steffen Auer praised the achievements of all award winners and encouraged them to contribute to their companies as employees, but also as people, and to take on responsibility: "We need you as well-trained specialists in the region. If you take on the challenges in your profession, you have very good career opportunities with your dual training." Auer also appealed to politicians to give due consideration to dual training with work in companies and vocational schools when discussing the topic of education.

with a lot of heart and soul

Enlarged wellness area and larger banquet hall at the Waldhotel Bad Sulzburg Sulzburg. It is only three and a half kilometers from the center of Sulzburg to the Waldhotel Bad Sulzburg and yet you arrive in a different world.

The hustle and bustle of everyday life evaporates over these three and a half kilometers - the Waldhotel Bad Sulzburg is an oasis of peace and relaxation. And yet everyday life is within easy reach. The Waldhotel is located at the end of the valley and there is no through traffic. "This is one of our unique selling points, because there are only a few places like this in Baden-Württemberg," says tenant Holger Weber. He knows how to make the most of this unique selling point. "You can just let the children play here without having to worry about them being run over". But it is also this tranquillity that attracts many visitors who are simply looking to relax, whether for a few hours or a few days. The Waldhotel Bad Sulzburg now offers new opportunities for day guests in particular. The enlarged wellness area has a modern design. Day guests have a spacious changing room at their disposal and short distances lead them directly to the four wellness and beauty treatment rooms, saunas, steam bath, whirlpool and indoor pool. A new relaxation room also offers the opportunity to relax after a wellness or beauty treatment. A view of the greenery is guaranteed from all rooms. "We are experiencing lively demand from day guests who would like to combine their stay in our wellness area with breakfast or dinner in a sophisticated ambience," explains Holger Weber, "but unfortunately we didn't have the space available until now. Things have now changed following the renovation," says a delighted Yara Weber, explaining that the treatments in the wellness area are carried out exclusively by state-certified specialists. Family celebrations of all sizes The Waldhotel Bad Sulzburg has 39 rooms and six conference rooms. The restaurant has 90 seats where guests can enjoy the specialties of the kitchen. Jean-Paul Petit has been the head chef for the past four years. Since the renovation, large parties (up to 130 people) can be accommodated in the extended banquet hall. However, the Waldhotel also offers suitable rooms for smaller family celebrations. The conservatory can accommodate up to 80 people. The renovation has also improved the amenities for private parties: Toilets are not far away and a separate entrance was also considered during the conversion. "This means that hotel guests don't feel disturbed and parties can go on late into the night," explains Holger Weber. A philosophy that Weber has implemented in all areas of the hotel. For a few months now, Holger Weber has been offering a special activity at the Waldhotel Bad Sulzburg together with the company Naturpfad Biehler: archery and team-building activities in the hotel's own climbing garden. This and the extensive renovation work are currently the latest projects that Weber has implemented at the Waldhotel. The Weber family has now leased the Waldhotel for ten years and has constantly pursued new goals and developed ideas during this time. With this passion, Holger and Yara Weber will continue to implement new ideas in the coming years and make the Waldhotel even more attractive and modern. Ideas are already in place.

big celebration at the waldhotel bad sulzburg

10 years of the Weber family as tenants of the 4-star vacation wellness and conference resort.

Around 80 guests joined Holger J. Weber and his wife Yara Weber to celebrate the opening of the new wellness area, the enlarged banquet hall and the 10th anniversary of the Weber family at the Waldhotel. In his speech, Weber thanked the guests for coming and for their many congratulations on the successful expansion of the hotel. In addition to the mayor of Sulzburg, Mr. Wehrle, and his wife, representatives of the surrounding communities and Alexander Hangleiter, representing DEHOGA Baden-Württemberg, were also present to wish the tenant family every success with the expanded Waldhotel. Many regular guests also came to marvel at the new wellness and beauty area, which includes 4 spacious treatment rooms, a large relaxation room and a new fitness room. The banquet hall, where the guests went after the tour, now offers space for up to 130 people. Weber was delighted to present his guests with a casually luxurious room that is now also large enough for weddings and family celebrations, which he previously always had to turn down due to a lack of space. The guests of honor and regular guests of the house enjoyed an excellent 4-course menu with corresponding wines from the Lämmlin-Schindler winery in Mauchen, which were charmingly presented by Heidi Schindler. Between courses, Dr. Paul Ridder, MD, recited eloquent and witty poems from his nutrition and life guide "3 Men in the Olive Tree" to match the courses being served. It was amusing to learn that chocolate and cocoa are even healthier than filling your stomach with organic fruit. After these interesting insights into nutrition and true indulgence, the evening ended with beaming faces - not only among the guests, but also among the Weber family, who are looking forward to a new era in this flagship business in the Markgräflerland region after almost a year of construction.
